Looking back at the company's history, it seems simple: an ancient winemaking establishment and a great passion for wine and things done right. Behind solid traditions of agricultural culture in the family. Thus the new Castel di Salve was born in 1992 bringing to life, in the name and place, the project and the history of the ancestors, history of wines and cellars started here in 1885. Every wine is unique and no wine ever resembles another: it is philosophy and also the method with which one works in Castel di Salve. Over the years we have learned to appreciate more and more the characteristics of the native vines of Salento, first of all the Negroamaro, selecting the best clones in the country, experimenting with vinification, taking care of the refinement of the wine in the smallest details.
